About the Journal

BrewingScience is a peer-reviewed open access journal targeted at scientists and technicians from the brewing and malting industry and suppliers with an interest in background scientific knowledge. The purpose of this scientific journal is the transfer of knowledge from universities, colleges and other areas of research to the industry, to control institutes, and to official channels such as supervisory departments. BrewingScience publishes bimonthly original scientific papers that describe the most significant research in all areas of brewing science and beverage science, e.g. raw materials, brewing technology, microbiology, yeast technology, filtration, beer analytics, process engineering, quality control and taste stability.

- Researchers from the United States tested 11 varieties of hops grown in Georgia to see how well they perform in a hot, Southern climate.

- A review evaluates conventional and novel methods for extracting bioactive proteins from brewers’ spent grain (BSG).

- What if free aldehydes in the mash were not the main drivers of beer ageing? Even a ten-fold increase at mashing-in had no measurable impact on free aldehyde levels in fresh or aged beer.
